Khakhra is a thin cracker common in Gujarati cuisine of western India. Especially among Jains. As we all know khakhra is Gujarati dish and made by using whole wheat flour so today I give a small healthy twist by using multigrain flour instead of wheat flour. It is served usually during breakfast.we made these Helthy version of Khakhra for those who want to consume the goodness of these Jems.

Ingredients

45 minutes
16 khakhra
  • 3/4 cupwhole wheat flour
  • 1/3 cupgram flour (besan)
  • 1/4 cuppearl millet flour (Bajra flour)
  • 1/4 cupmaize flour (Yellow corn flour)
  • 1/4 cupsorghum flour (Jowar flour)
  • 1 cupfinely chopped mint leaves
  • 2 tbspgreen chilli paste
  • 1 tsproasted cumin powder
  • 1 tspcoriander powder
  • 1/2 tspturmeric powder
  • 1 tspred chilli powder
  • 2 tspoil
  • Salt as per taste
  • Whole wheat flour for rolling

Steps

    First upon take a mixing bowl, then add all flours. Now add finely chopped mint leaves, finely chopped green chilli, roasted cumin powder, coriander powder, turmeric powder, red chilli powder, salt and oil. Then all combine well. Add water as required to make a semi soft dough. Then divide the dough into equal portion.

    Now roll out a portion of the dough into a thin circle roti using a little whole wheat flour for rolling.

    Then heat a tawa on a medium flame. Then cook the khakhra on a slow flame till pink spots appear on a both sides.

    Now to fry this khakhara for the second time, put oil on the tawa, add half baked roti to it and fry it on slow gas flame till it turns crisp golden brown spots appear on both the sides by pressing it with a wooden stick. Prepare all the khakhras in this way. Then completely cool down this khakhra and store in an airtight container.

    Now our very healthy and nutritious Multigrain Mint Khakhra is ready for serve. This khakhra is serve with achaar masala or any pickle.
