California Farm Calories Based Cooking

During our last California wildfire evacuation, which coincided with Covid quarantine, I volunteered to cook three weeks for a dozen fellow evacuees. No farmers market, store shelves were empty. Supplies were limited, and tastes varied: old, young, traditional, vegan, vegetarian, diet, american, african, european, latin, healthy and sick people.
I made dinner without meat or eggs, but with all the calories, fats , proteins, and vitamins included. I followed the US Army quartermaster calories portion guide lines. They explain how to count calories.
I then added a quarter pound of traditional meat, or a half pound meat substitute: legumes, mushrooms, tofu, seitan. Dinners were served buffet style. Enough calories for all.
I am posting this so I have a record for future evacuations.

I teach people at the farmers market to grow small scale fruits and vegetables. My grandparents and parents taught me growing, cooking and preserving home grown fruits and vegetables, eggs, meats and fish. I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste. These are the global, organic and vegan family recipes we use.
