Combine mango dices and achar masalo very well. Press the mixture to sit tightly in the bowl. Cover and leave it overnight. You'll notice that methi (fenugreek seeds) will absorb the moisture from salt and its grains will look bigger than earlier.

Heat up oil till smoking point. Let it cool completely to room temperature. Add it in the achar mixture and combine well.

The achar is ready!
