This is an easy healthy and delicious recipe for bread and is good for those who are trying to eat healthy. This einkorn bread is really yummy with vegan cream cheese, coconut oil and/or avocado dip. We have adapted this recipe from our mother’s bread recipe.
The bread can stay out of the fridge for about 2 days and it can keep in the fridge for 5 days. If refrigerating, warm up the bread before eating for the best experience 😋.

Ingredients

1hr 40mins (20mins prep, 1hr rise, 20 mins bake)

  1. Equipment
  2. 2mixing bowls
  3. 1mixing spoon
  4. Measuring cups and spoons
  5. 1spoon
  6. 1sieve
  7. 1small bowl
  8. 2muffin cases of 12 (or 3 bread tins) we use silicone
  9. Ingredients
  10. 1 kgeinkorn flour
  11. 4 tablespoonsdry chia and flax seeds, soaked in water
  12. 4-6 teaspoonsmolasses (depends on how sweet you want the bread to be)
  13. 700 mlwarm water
  14. 1 teaspoonsalt
  15. 2 teaspoonsquick yeast
  16. 2 cupsoats

Cooking Instructions

1hr 40mins (20mins prep, 1hr rise, 20 mins bake)

    Sift the flour into a large mixing bowl. (Put the remaining husks in the flour as well to keep the nutrients)

    Add the salt, yeast and oats

  3. 3

    Add the soaked seeds in

  4. 4

    Mix the molasses in the warm water

  5. 5

    Pour the molasses water in and mix well

  6. 6

    Cover with plastic wrap and leaves to rise in a warm place for 55-60 minutes

    After rising, preheat the oven to 220 degrees C

    Spoon the dough into muffin cases (alternatively, use 3 bread tins) and smooth over with water and the back of a spoon (don’t use too much water)

    Put the muffins the oven to bake for 20 minutes (double the time for loaves ie. 40 minutes)

    Let the bread cool after baking

    Enjoy with your favourite spread!

The cases we are using are silicone; dough doesn’t stick to them. If you are not using silicone cases, brush A LITTLE oil on your cases to prevent sticking. Also, if you need to add more water to the dough if it’s too dry, add in warm water (hot water will kill the yeast) (you don’t need more molasses) little by little into the dough and mix.
