A delicious potato and fresh sardine stew, made even better with homemade tomato sauce and fish stock. We really enjoyed eating this at home.

Heat the tomato sauce with the paprika. Season the cleaned sardines (heads and bones removed, butterflied) with salt.

Dredge the sardines in flour and fry them.

Pour the wine into the tomato sauce over high heat and cook for a couple of minutes to let the alcohol evaporate. Then blend everything together.

Add the potatoes, peeled and broken into chunks, and stir to combine. Pour in the fish stock and simmer for about 30 minutes.

Adjust salt and pepper to taste. Add the sardines when the stew is done so they warm through with the residual heat.
