Panch phoran is a perfect blend of flavourful ingredients which gives an elevated taste to the recipes in which it's used.
Steps

For Panch Phoran:
Dry roast all the 5 ingredients on slow gas. Transfer to a plate and cool it to room temperature.This can be stored for use in different recipes. - 2
Wash Masoordal and cook it for 3 whistles in a pressure cooker.Chop the required vegetables.
In oil and ghee add in 1tsp of PANCH PHORAN. When it splitters, add garlic and ginger-chilli paste. - 3
Add in onions. When well done add in tomatoes and cook for 2 minutes. Now add salt and dry masalas. Saute for 30 seconds.

Add in 2-3 tbsp water and cook the masalas well. Add in kasuri methi.

Open cooker and mix the boiled Masoordal gently. Now add in the dal to the boiling masala tadka. Mix.

Add required quantity of hot water and set the dal consistency. Bring the dal to a boil. Serve hot with paratha, roti or rice.
