In these perfect Dosas made with Yellow Sorghum Millet or Jowar, i have used whole Yellow Jowar and not the flour. Healthier and yummier, these make for an excellent Iron rich food for your family. Wash and soak both the sorghum millet and the lentils for a good 6 to 7 hours in the day time. Grind them to a smooth paste using same water in which they were soaked as required. Set aside.

Allow it to ferment overnight. Next morning, stir in some salt according to taste and mix.

Make dosas effortlessly. Pour a ladleful of the batter on a hot non-stick tawa or a cast iron griddle. Spread in a circular motion to form a thin crisp round shaped dosa. Drizzle oil or ghee on it and cook for about 2 minutes each. Make all in the similar way.

Before making dosas, stir in some salt and mix. Start making dosas. Heat an iron griddle or a non-stick dosa tawa on a medium high heat. Spread a ladleful of the batter in a clockwise manner in one motion. Cook on a medium high to high heat keeping an eye on it all the while. Drizzle some oil or ghee on the sides of the dosa and on it as well. Cook until crisp and golden brown.

Serve them piping hot from the griddle to the plate alongside any of your favourite chutneys and potato masala. Enjoy!
