First let's wash and clean the green fenugreek leaves. Trim the leaves and throw the stems. Then soak the leaves in water and wash it after 10 minutes of soaking so rhat all the dirt and impurities comes out. Wash it throughly with water 5-6 times then drain out all the excess water and keep it aside for all the water to come out. Now in a big bowl add wheat flour and all the dry spices and mix well. Finely chop the ginger, garlic, green chillies, onion and tomatoes or chop it in a chopper.

Now cut the fenugreek leaves also and add all the chopped ingredients in the wheat flour mix along with yoghurt. Now mix all the things very well in the flour. All the ingredients had a lot of water in it first combine them all well with flour then add additional water as needed to make a soft chapati type dough. Knead to for 4-5 minutes then add oil to it and knead it again. Cover it and keep it aside to rest for 15-20 minutes. Meanwhile let's make aloo pyaz chutney.

For that in a big bowl add tamarind pulp along with all the dry spices and mix well. Dice or chop the onion and green chilli and mix them also. Now peel the boil potatoes and press it by hand to turn into big and small pieces add them also in the tamarind pulp and mix well. Add water to it as needed then add the chopped coriander leaves to it mix it again and keep it aside for 10 minutes. Make sure you rest it atleast for 10 minutes before serving for all the flavours to combine well.

Now our paratha dough is also ready knead it for a minute then make ball of it in a size you want. Don't make it too big. Make all the balls then rest it for 5 minutes. Heat up the griddle now. Take one ball of dough. Dip it in dry flour then flatten it by hands and roll it by rolling pin just like a roti or chapati. You can make it layered also like square or triangle paratha. Now place it upon the hot griddle and cook it on a medium flame flipping it 2-3 times to cook it properly.

You can even add ghee or oil to fry the parathas or simple make it without oil just like me and apply some ghee on top of it after cooking. Like so make all the paratha top it with ghee and serve hot with aloo pyaz ki chutney and salad or with anything you like.
These parathas are so healthy and delicious that you can't control on 1 or 2. Make it and enjoy it with your loved ones.
