Cooking Instructions

In a small pot, bring the sake to a boil to evaporate the alcohol. Add sugar, soy sauce, and water, and bring to a quick boil while shaking the pot until the sugar dissolves. Then, turn off the heat.

Cut the ingredients into bite-sized pieces. Tear the shungiku leaves by hand and separate them from the thick stems. Cut the stems into 1.5-2 inch lengths.

Heat the pot over medium-high heat and rub beef fat all over the surface, then remove it (do not discard the remaining beef fat as it will be used later).

First, grill the leek on both sides until browned, then remove it. The flavor of the leek will infuse into the oil, enhancing the taste.

Rub the remaining beef fat into the pot and spread out the beef, quickly searing both sides.

When the beef is still slightly red, add the reserved leek and a little warishita sauce, mix everything together, and start eating the beef.

Add all the remaining ingredients and warishita sauce, and once cooked, it's ready to serve.

Enjoy with a beaten egg. Adding udon noodles and simmering them will allow the flavors to soak into the noodles, making them delicious.
