Ingredients

  • Cookies
  • 168 ghoney
  • 200 gdark brown sugar
  • 1/4 cupmelted butter
  • 1large egg
  • 1lemon, zested. Save for lemon juice that will be used in the glaze
  • 210 gall purpose flour
  • 104 gground almonds or almond flour
  • 1 Tbsplemon juice
  • 1 Tspbaking powder
  • 1/2 Tspbaking soda
  • 2 Tspcinnamon
  • 1/2 TspSalt
  • 1/2 Tspallspice
  • 1/2 Tspginger
  • 1/4 tspground cloves
  • 1/4 tspnutmeg
  • Glaze
  • 130 gPowdered Sugar
  • 1lemon, juice
  • 1 Tspvanilla
  • 1 Tspdark rum

    Melt the butter. Combine all wet ingredients in a bowl and stir.

  2. 2

    Add dry ingredients. Sift them in, if possible. Mix until barely combined.

  3. 3

    Let the mix rest for 1-12 hours, and chill before prepping to make.

  4. 4

    Preheat your oven to 350 F. Use a cookie scoop to portion out dough, no more than 12 to a lined baking sheet.

  5. 5

    Bake each batch for 15 minutes. Let each batch cool, then apply a thin glaze using a pastry brush. Apply a second coat of desired.
