Winter is a season of abundance when it comes to fresh vegetables. There are some vegetables which are available only during winters. Some vegetables commonly associated with winter. Fresh Green Chanas are a powerhouse of nutrition. They are rich in protein, fiber, vitamins and minerals. These tender chickpeas are made into a sabzi by cooking them in a green masala. The green masala is made by blending fresh coconut, coriander leaves, ginger, green garlic, green chillies and a small quantity of tender chickpeas. The chickpeas are cooked in this masala alongwith spices. This delicious subji pairs well with rotis as well as steamed rice.

Shell the chickpeas. Wash, dry with cotton cloth and keep aside. Then after, add these green chickpeas to the pan and dry roast them for 2 to 3 minutes. After that take out the roasted chana in another vessel and cool down.

To prepare the green masala, into a mixer jar, add chopped green coriander leaves, chopped fresh green garlic, green chillies, ginger, fresh coconut pieces and water. Then blend it. Then after add roasted green chickpeas and blend to a fine paste.

Now heat oil in a pan. Add cumin seeds and asafoetida. Saute for few seconds. Then add finely chopped spring onion's white part and suate for turn pink colour. Now add finely chopped spring onion's green part and mix it very well.

Then add the green msasala paste. Rinse the mixer jar and add that water. Now add salt and mix very well. Then cover and cook till the masala paste is suate very well.

Add the remaining green chickpeas and mix well. Cover and cook till the chickpeas become soft.

Now our Maharashtrian Style Hara Chana Subji is ready for serve. Serve and garnish with green coriander leaves and serve with rotis or steamed rice.
