Ingredients

  • 1 cupdry black turtle beans, rinsed, makes 3 cups cooked
  • 4 cupswater + 3 cups of water
  • 1 cupleftover bean water
  • 1/2 cupbacon fat
  • 1/8 TspGarlic
  • 1/8 Tsponion powder
  • 1/8 Tspflaked seaSalt
  • 1/8 TspMexican Oregano
  • 1/8 TspRed Cayenne pepper, optional
  • 1/8 TspCumin
  • Equipment: sauce pan with lid, cast iron skillet
  • Cost: dry beans 12 1/2 cents per cup, bacon fat 25 cents, other 25 cents, optional cheese $1. Four portions, 42 cents per portion

  1. 1

    Rinse, bring beans to boil in 4 cups water, takes about 8 minutes. Boil beans half hour on high, lid off. Refill pan with cup of boiling water. Then boil half hour on medium, lid on. Save leftover water for cooking, called fresh aquafaba, for other recipes, about one cup. Pour off left over water, pour on 3 cups of fresh water.

    Boil beans another hour on low covered by boiling water, lid on, with 1/8 Tsp garlic, onion and salt. Drain off the beanwater.

    Fry spices and herbs in medium hot cast iron skillet in bacon fat, when fragrant, add boiled beans, mash with masher and Tbs of bean broth water while being fried, low heat. Optional, add home made sofrito sauce

    Grate and Melt queso fresco on top, stir into the beans, serve.
