Moussaka is a dish that, along with pastitsio, I think all of Europe knows! Who wouldn't understand if a foreigner said they love Moussaka??? Since the weekend is coming up, I'll make a small moussaka in a baking dish, as I'm expecting a friend to join me for it. I make my moussaka traditionally with only eggplants. 🍆🍆🍆

I had the last eggplants from the garden, which I had sliced, baked with a little oil and salt, and when they cooled, I wrapped them in plastic wrap and put them in the freezer.

Place a few spoonfuls of homemade tomato sauce at the base of the baking dish. Then, layer a row of eggplants and cover with a thick layer of ground beef as you would prepare for spaghetti.

After layering the ground beef, repeat with the eggplants. On top of the eggplants, add a few more spoonfuls of tomato sauce.

Set the baking dish aside and in a pot, make the Béchamel-Mornay sauce, and cover the dish with it.

Sprinkle with a little shredded cheese and bake in a convection oven at 375°F (190°C) for about 40-45 minutes.
