Basant Panchami marks the end of winter and the beginning of spring. This festival is primarily dedicated to Goddess Saraswati, the goddess of wisdom and learning.
This day is even more special for me as it marks our Golden Jubilee anniversary, celebrated on the auspicious Basant Panchami Tithi.
To honor this occasion, I am preparing a traditional Maharashtrian meal, featuring Kesari Bhat (Sakhar Bhat). This fragrant sweet rice is made with ghee, saffron, sugar, and dry fruits, filling the air with an irresistible aroma that everyone loves!

First, wash the rice and soak it for 10 minutes. Then, cook it for another 10 minutes.

Heat a pan and add ghee. Once it melts, add the dry fruits and fry them for 30 seconds. Set them aside. Next, add coconut to the same pan and stir for 30 seconds.
In another pan, heat some ghee. Once it’s hot, add cloves and ½ cup of water.

Add sugar and coconut to the pan, then cook for 30 seconds while mixing well.
In a small bowl, add warm milk and soak the saffron strands. Pour the saffron milk into the pan and mix well.

Add the cooked rice and mix well. Then, add cardamom powder and the fried dry fruits, mixing everything together.
Drizzle some ghee over the mixture, cover the pan, and let it steam for one minute. Your Kesari Bhat is now ready! Garnish with dry fruits and serve warm.
