Surati famous street paratha is yet another street food from Surat. The paratha is really unique and nutritious. It has mixed vegetables and cheese as stuffing, and after it has been cooked it is cut like a pizza, and then you open the top layer and the paratha turns into a beautiful sunflower. A fried papad is placed in the centre and finally lots of cheese is grated . Gujrati’s normally like a overdose of cheese in their food .

First of all, add wheat flour in a big pot, add salt and a pinch of oil to it and mix it by adding little water to make a soft dough. Now apply some oil to this flour, cover it and let it rest for 10 minutes.

Now we will make the stuffing for the paratha. For this, add finely chopped cabbage, finely chopped capsicum, grated carrot, grated beetroot, finely chopped onion, grated ginger, finely chopped green chillies, grated paneer, grated mozzarella cheese, grated processed cheese and finely chopped green coriander leaves in a bowl and mix well.

Now add red chilli powder, chaat masala, roasted cumin powder, coriander cumin powder, garam masala, salt and oil to this and mix well. (Adding oil to the mixture gives the masala color and binding similar to like boiled potatoes)

Now add oil to the rested dough and knead it well. After that, make a round balls similar to this. Now apply dry flour to this balls, roll the whole roti, fill the stuffing inside and gently press all sides, apply dry flour and gently roll the paratha.

Now heat a roti tawa, heat the butter in it, add the parathas on it and roast the parathas on both sides on medium gas flame.

Now take out this paratha in a serving plate and leave the edge with a pizza cutter and make cuts on four sides to open the layer from above. Now garnish this paratha with papad crumble, grated processed cheese and sprinkling green coriander leaves on top.
