Ingredients

Serves 2 servings
  • 2eggs
  • 1/2green onion
  • 1 teaspooncornstarch mixed with water
  • 1 tablespoonvegetable oil
  • Salt, to taste
  • Sugar, to taste
  • 2 teaspoonssoy sauce
  • 2 teaspoonsmirin
  • 1 teaspoonsake
  • 1 teaspoonsugar

Steps

    Crack the eggs into a bowl, add 1 teaspoon of cornstarch mixed with water, a pinch of salt, and a pinch of sugar.

    Lift the egg whites about 5 times to cut them, then mix about 50 times with chopsticks touching the bottom of the bowl.

  3. 3

    Slice the green onion, including the green part, diagonally into thin strips.

  4. 4

    Mix the ingredients labeled A together.

  5. 5

    Heat 1 tablespoon of vegetable oil in a frying pan, add the green onions, and let them cook for about 1 minute until they are slightly browned.

  6. 6

    Pour the eggs into the pan, wait about 10 seconds, then stir them together and gather them in the center. Cover and cook for about 3 minutes.

  7. 7

    Flip the eggs, cover again, and cook for another 3 minutes.

  8. 8

    Drizzle the mixed A ingredients over the eggs and wait for about 2 minutes.

  9. 9

    Flip the eggs again, wait for 1 minute, and it's done!
