I'm a fan of red enchiladas! Today I made red enchiladas and decided to add a green chile for a different touch.
Steps
- 1
Boil the chiles, garlic, tomatoes, and onion together.
- 2
Once cooked, transfer the chiles, garlic, tomatoes, and onion to a blender. Add the tomato bouillon cube and blend. Pour the blended sauce into a bowl and stir in the chicken bouillon cube.
- 3
Heat plenty of oil in a skillet. Dip the tortillas in the sauce, then fry them in the skillet.
- 4
Now that you have all the ingredients ready, assemble the enchiladas: dip each tortilla in the sauce, fill with crumbled queso fresco, and roll it up. Repeat with all the tortillas.
- 5
It's quick and easy! Make sure the tortillas are at room temperature. If they start to fall apart, warm them on a griddle for a bit to soften them.
- 6
Garnish as you like and enjoy!
- 7
That's it—simple, affordable, and delicious. I hope you enjoy it!
