Ingredients

  • 2 cupsvery finely ground bulgur (about 320 grams)
  • 2 cupsfine semolina (about 320 grams)
  • 3 1/2 cupsboiling water (about 830 ml)
  • 1 tablespoonsalt
  • 1 teaspoonpaprika
  • 1/2 teaspoonblack pepper
  • 3 1/2 cupsboiling water (about 830 ml)
  • 1small onion, grated
  • 1 tablespoongrated orange zest
  • For the filling:
  • 1 poundground beef (about 450 grams)
  • 4medium onions, finely chopped
  • 1 tablespoonclarified butter or ghee
  • 2 tablespoonspomegranate molasses
  • 1/2 cupchopped walnuts or peanuts (about 60 grams)
  • 1 teaspoonsalt
  • 1/2 teaspoonblack pepper
  • 1 teaspoonpaprika
  • 1 teaspoonmeat spice blend
  • To smooth the shell:
  • 1 tablespooncornstarch
  • 1/2 cupwater (about 120 ml)
  • Oil for frying

    Combine the bulgur, semolina, and boiling water in a bowl. Let it sit for 1 hour.

    Add the salt, spices, and grated onion. Knead the mixture well.

    Cook the ground beef with the onions, salt, and spices. Let it cool, then add the remaining filling ingredients and mix.

    Divide the dough into balls, cover them with a damp towel to prevent drying, fill with the meat mixture, and smooth the surface with the cornstarch and water mixture.

    You can freeze the kibbeh spaced apart, then fry in hot oil when ready to serve.
