Stuffed Tomatoes in gravy

Start by boiling potatoes and green peas. Mash boiled potatoes. Give a cut on the top of tomatoes and remove seeds and pulp from it and make hollow for stuffing.

In a pan, heat oil, add coarse masala, curry leaves, chilli ginger paste, saute for a while and add mashed potatoes

Add all the masalas mentioned for stuffing, also add boiled green peas and coriander. Give it a good mix. Our stuffing is ready.

Stuff the tomatoes with the stuffing. Microwave for a minute.

For gravy, mix oil and ghee in a pan and heat it. Add shahi jeera and other khada masala. Add white paste and saute. Add onions and chilli ginger garlic paste and saute.

Add tomato puree and saute till oil seperates. Add all the spices, kasuri methi, kitchen king masala and saute for couple of minutes.

Add salt and sugar. Add water as needed. To thicken the gravy you can add little stuffing to it.

For serving, in a bowl place stuffed tomatoes in hot gravy and garnish with fresh cream and coriander. Serve with naan, paratha or rice and enjoy

You can make stuffing from ingredients of your choice eg. paneer, mix veggies, boiled mung- chana, etc.
