Cooking Instructions

Preheat oven to 400°F.

In a Ziploc bag, add tomatoes, oil, seasoning, and the juice from half the lemon.

Gently toss the salmon fillets in the bag and place on a foil-lined baking sheet, arranging the tomatoes and a slice of lemon on each fillet.

Microwave the potatoes for 5 minutes before tossing in the same bag and placing next to the fillets on the baking sheet. Season the fillets and potatoes to taste with fresh ground salt and pepper.

Bake for 12-15 minutes until salmon is opaque and flaky when pierced with a fork.

While the salmon and potatoes are baking, microwave the steamable green beans as directed on the packaging before tossing in a pan over medium-high heat with the remaining ingredients until you're ready to plate.

When the salmon is ready, set your oven to high broil and continue to cook for about 2 minutes, or until potatoes have turned golden-brown.

Arrange your ingredients on a plate and garnish with a sprig of thyme on each fillet.

Serve and enjoy!

So I made Vickys Lemon & Dill Salmon Skewers for dinner last night. They are delicious by the way and I highly recommend trying them!! I bought 4 salmon fillets, about 2 lbs and cut the cubes from the thick center portion of each fillet. This left the thinner edges of each fillet to do something with. So this morning I decided to make a quick salmon salad with the scrap salmon. I even had about 4 cubes of grilled salmon left over from last night that I added in to my flaked salmon. I used all my fresh dill last night so used dried dill weed in the salad, but fresh can certainly be used. Great use of leftovers.I'd add a link to Vicky's amazing recipe, but I don't know how! At the market, the tomatoes are starting to look pretty good, so I picked up a few. I was in the mood for salmon and got a small tail-end fillet chunk. The salmon set me thinking that dill might work with tomatoes. I'm not sure why I thought to brown the butter, but it makes sense in hindsight. There was an element missing, so I found some Greek yogurt in the fridge and added dill, but it was lacking. Tried salt and pepper. There was a definite improvement, but not quite there. A touch of horseradish sealed the deal. It made sense to use the, "tomato story," bowl I got at Daiso, a Japanese dollar store near my house. Pretty satisfied with the results overall.
