Prep the Matoke:
Peel the green bananas (tip: rub your hands with oil to avoid sticky sap). Cut them into 1-2 inch chunks and soak them in a bowl of water with a pinch of salt to prevent browning while you prep other ingredients. - 2
Heat the Oil:
In a large pot or deep skillet, heat the vegetable oil over medium heat. - 3
Cook the Aromatics:
Add the chopped onion and sauté for 3-4 minutes until soft and golden. Stir in the garlic and ginger (if using) and cook for another minute. - 4
Add Vegetables:
Stir in the chopped tomatoes (or tomato paste) and green bell pepper (if using). Cook for 3-5 minutes until the tomatoes soften and form a thick base. - 5
Season:
Add the turmeric and ground coriander (if using), stirring for 30 seconds to release their flavors. Season with salt and pepper. - 6
Add Matoke:
Drain the matoke chunks and add them to the pot. Stir gently to coat them with the tomato-spice mixture. - 7
Simmer:
Pour in the water or broth, ensuring the matoke is mostly covered. Bring to a gentle boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the matoke is tender and the liquid has thickened into a stew-like consistency. Add more water if it gets too dry. - 8
Taste and Adjust:
Check the seasoning and adjust with more salt or pepper if needed. - 9
Serve:
Garnish with fresh cilantro or parsley (if using) and serve hot with rice, ugali, or chapati. - 10
TIP:
Matoke Texture: Green bananas should be soft but not mushy when cooked. Test with a fork to check doneness.Variant ideas : For a heartier dish, add cooked beef, chicken, or peanuts during the simmering stage.
Simple recipe: Skip the bell pepper, ginger, or spices for an even simpler version—just onion, tomato, and salt still make a tasty dish.
