Pappa al pomodoro is a traditional bread and tomato soup originating as a peasant dish in Tuscany, Italy. Although there are many variations, traditional Pappa al Pomodoro is made with stale Tuscan bread (“Pane sciocco”), tomatoes, garlic, basil, and extra virgin olive oil. The dish was created to use leftover bread, and can be eaten warm or cold, all year round. Although the origin date of Pappa al pomodoro is not known, it gained popularity when it was mentioned in Luigi Bertelli’s 1912 publication “Il Giornalino di Gian Burrasca” and Rita Pavone’s song in 1965, “Viva la pappa col pomodoro”.

In Italian, “Pappa” directly translates to soups or mushy, baby food, but can also be used to describe overcooked foods like pasta or rice. “Pomodoro” means tomato and is a contraction of “Pomo” (from the Latin word Pomum, meaning apple) and “D’oro” (of gold).

Ingredients

2 people
  • 2 can (400 g)peeled tomatoes
  • 300 gstale bread
  • 120 mlvegetable stock
  • 10-12fresh basil leaves
  • 4-5 tbspextra virgin olive oil
  • 1small onion, diced
  • 1garlic clove, crushed
  • Pinchsalt and pepper

Steps

  1. 1

    Lightly sweat the onions and garlic clove in olive oil over medium heat. In the meantime, crush the peeled tomatoes with your hand.

    Add the crushed tomatoes to the pan and lightly salt and pepper.

    Once simmering, add vegetable stock and bring back to a simmer.

    Tear the basil leaves and stale bread with your hands, and add directly into the pan.

    While mixing, mash the bread constantly with a whisk until you get a mushy consistency. Taste for salt and adjust if needed.

    Serve warm or cold, and garnish optionally with fresh basil. Enjoy!
