Prep Rice (5 min): Rinse rice under cold water until water runs clear to remove excess starch. Drain well.

Sauté (This step is Optional) (5 min): In a medium pot, heat oil or butter over medium heat. Add chopped onion and sauté until soft and translucent (3-4 minutes).

Cook Rice (20 min): Add rice to the pot (with onions or directly if skipping onions). Stir briefly to coat. Pour in coconut milk, water, and salt. Stir once, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until liquid is absorbed and rice is tender.

Rest & Fluff (5 min): Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.

Serve: Serve hot as a side with curries, stews, or grilled meats.

TIP:: For richer flavor, use full-fat coconut milk.
Adjust water slightly if using thicker coconut milk (e.g., 1.5 cups water instead of 2).
