6 minute jammy soy-marinated eggs

Add 3 cups of water to sauce pan and bring to boil. While water is coming to a boil, gather ingredients.

Combine soy sauce, sesame oil, cooking wine, and optional sesame seeds. Mix evenly and add to a sealable container for marinating.

Once your water is boiling, carefully add the eggs into the hot water with either a spoon or tongs to avoid accidental cracking. Boil for 6-7 minutes depending on the size of your eggs.

While eggs are boiling, prepare an ice bath with ice and remaining water.

When eggs are done boiling, carefully remove from pot into ice bath one at a time and allow to sit until all eggs are cool to the touch. This will take about 3 minutes.

Once eggs are cool to the touch, remove from ice bath and carefully peel the eggs. Be careful not to rupture the eggs. Add them to the marinade container. The marinade does not have to fully submerge the eggs, but do give the eggs a flip before putting them into the fridge for the most even marination. Allow eggs to marinate for at least 3 hours up or overnight.

Serve over rice or in a noodle soup.
