A light, tangy vegetarian noodle soup that's still hearty enough for hot days. This dish came about when I quickly cooked something to eat before a work trip. No matter how simple, homemade food is always the best because I can make it just the way I like.

A light, tangy vegetarian noodle soup that's still hearty enough for hot days. This dish came about when I quickly cooked something to eat before a work trip. No matter how simple, homemade food is always the best because I can make it just the way I like.

This is soft tofu (óc đậu). Many people may not know what it is.

Sauté the leeks in oil until fragrant, then add chopped tomatoes and cook until very soft.

Add the soft tofu and bring to a boil. Season with vegetarian fish sauce and vegetarian seasoning powder. Add enough water for the soup. If using fresh mushrooms, add them and cook for about 10 minutes.

To serve, place cooked rice noodles in a bowl, add your favorite toppings, pour the broth over, and sprinkle with fresh herbs and sawtooth coriander.
