Ingredients

  1. Soft tofu (óc đậu)
  2. Tomatoes
  3. Vegetarian fish sauce, vegetarian seasoning powder
  4. Vegetable oil, leeks
  5. Toppings for serving
  6. Vegetarian sausage or meat substitute
  7. Straw mushrooms (optional)
  8. Fresh herbs for serving

Steps

    This is soft tofu (óc đậu). Many people may not know what it is.

    Sauté the leeks in oil until fragrant, then add chopped tomatoes and cook until very soft.

    Add the soft tofu and bring to a boil. Season with vegetarian fish sauce and vegetarian seasoning powder. Add enough water for the soup. If using fresh mushrooms, add them and cook for about 10 minutes.

    To serve, place cooked rice noodles in a bowl, add your favorite toppings, pour the broth over, and sprinkle with fresh herbs and sawtooth coriander.
