Holi ka Thandai!

Holi being a prime festival of spring, we were supposed to feel all soothing and fun. But thanks to climate change, summer gushes into our lives by then and we do need a potent drink to mend our throat and immunity during seasonal transitions. A cool Thandai with enriched goodness of healthy fats and nutrients is all we need!

In an already heated pan, dry roast all the almond, cashews, pistachios, seed and saffron for about 5-7 mins in low- medium heat. Also put the rose petals into the pan and roast them together.

Once roasted, take them off the pan and let it cool at room temperature. Put all the seeds and nuts in the mixer grinder, and grind them all to a fine powdery texture. Now the Thandai mix powder is ready.

In a thick bottomed saucepan, pour the milk and let it reach the first boil in medium flame. Keep stirring it so that the bottom section of milk isn't burnt anyway.

Now add the powdered sugar to it, and gradually add the Thandai mix powder to the boiling milk. Keep stirring. You can see the milk is slightly reduced and the consistency is thickened, with a warm yellow hue. That's what we need!

Once it's done, remove from heat and pour them into earthen mugs or glasses. Add some nut mix and rose petals as garnish on top and let it cool for 30 mins in refrigerator. Serve and enjoy on Holi-day or anyday!
