Tiffin is a South - Asian word meaning a light breakfast or light tea - time meal at around 3 pm. consisting of mainly tea - time snacks.
Tiffin can also refer to boxed or packed lunches that children & office - goers carry with them . In Mumbai , they have dabbawalas delivering tiffins to schools, colleges & at work places .
Generally for office - goers or other work places the tiffin consist of roti, 1 subji, dal & salad . Children tend to be fussy in eating their tiffins , so utmost care is taken to give their choice of food in the tiffin .But at the same time care is taken that food is full of nutrients as give days a week ,children eat only their tiffin for lunch.
Nowadays, in Metros like Mumbai , Bangalore, Kolkata a dabba cartel ( traditional lunch box service) is there which carries out tiffin service .
Below is a lunch box recipe that can be eaten on a hot summer afternoon . It is light yet satisfying. This recipe is more for children of all age groups. This Vermicelli Upma can be
taken with kids when they go to play on the grounds, swim or from school they are rushing for tuitions, & can be had on the way . But remember to pack a banana or apple or dry fruits with it also which will keep them fuller for a longer time.

Dry roast the vermicelli. Remove in a plate & keep aside. Par boil corn & carrots. Drain & keep aside the vegetable water for later use.

Take oil in a pan.Add mustard seeds & urad dal. Saute. Do not brown the urad dal. Add curry leaves, asafoetida, cashews & onions. Saute till onions turn pink in color.

Add vermicelli, salt & the veggies. Add vegetable water + 1/2 cup more.Use hot water only.Mix & cover & cook for 3 - 4 minutes.

Cook without the lid for a minute. Add lemon juice & sugar. Mix. Cool the Vermicelli Upma. Garnish with chopped coriander& grated fresh coconut. Cool. Pack in a lunch box.

This Vermicelli Upma is ideal for lunch box as tiffin recipe for both children & office goers.

Serving options : 1) You can ofcourse serve it as it is.See pic 1 below 👇 2) Serve it with a bowl of soup / tomato Saar as shown in pic 2 below 👇. 3) Keep a few dry fruits in another small container. 4) Keep a banana or any other fruit of their liking but make sure it is not that juicy that the juice might drip while eating it. I have cited a few examples here but you can add anything of your choice keeping in mind about health as well as taste.
