Peel, wash and cut sponge gourd in thick julienne cut.

Break urad dal vadi and fry in oil till golden brown in colour.

Remove from oil and keep aside.

In the same pan, heat mustard oil and put sliced onion and dry red chillies.

Fry onion till golden brown in colour and add chopped sponge gourd and mix well.

Add fried urad vadi, chilli powder and mix well.

Add salt and lower the heat.

Cover and cook till sponge gourd and vadi cooked properly.

Lastly, cook sabzi on high heat till water evaporate.
