Ingredients

  1. 2 bagsspinach
  2. 1 tbspnon-dairy butter
  3. 2 tbspminced white onion
  4. 1 clovegarlic (minced)
  5. 2 tspflour
  6. 1 1/2 cupsnon-diary milk
  7. 1/2 tsplemon juice & zest
  8. 1 tspWorcestershire sauce
  9. 1/4 cupnon-dairy sour cream
  10. 1/2 cupnon-dairy mozzarella cheese
  11. 1/2 cupartichoke hearts chopped
  12. Salt to taste

Cooking Instructions

30 minutes

    Blanch spinach in salted water for 30 seconds. Drain and rinse in cold water. Squeeze out extra moisture and finely chop.

    Melt butter in saucepan over medium heat, then add onion, garlic, and pinch of salt; cook until until onion is soft.

    Add flour and stir until it’s a gentle toasted color. Whisk in milk, whisking continuously until thick. Remove from heat and stir in lemon juice/zest, Worcestershire sauce, and sour cream.

    Put the pot back on the stove over medium heat; add spinach, artichokes, and cheese. Stir until cheese melts. Serve warm with toasted bread or kettle chips!
