Serve as an appetizer with a fresh herb vinaigrette (see the recipe).

In a large bowl (to allow the batter to rise), whisk together all the batter ingredients. Cover and refrigerate for 1 hour.

Wash the zucchini blossoms and remove the stamens. Rinse quickly and let them dry on paper towels. (Dry the blossoms as thoroughly as possible to prevent the oil from splattering during frying.)

Heat the oil in a skillet. Dip each blossom in the batter and fry for a few minutes on each side. Cooking is quick. Remove and drain on paper towels.

Enjoy hot, served with a fresh herb vinaigrette. (See the recipe)
