Ingredients

  • 1 csuper grain blend
  • 2 cHomemade fresh curd
  • 2 cgreek yogurt
  • 1/2 cHeirloom tomato, chopped
  • 1/4 tspmethi powder
  • 1/2 cgreen bell pepper, finely chopped
  • 1/2 corange bell pepper, finely chopped
  • 1/2 czuchini, finely chopped
  • Salt to taste
  • Thadkaa, temper:
  • 1 tbspsesame seed oil
  • 1 tbspginger, finely chopped
  • 1 tspcumin seeds
  • 1 tspmustard seeds
  • 1/2 tspasafetida
  • 1green chili, finely chopped
  • 20curry leaves
  • Garnish Optional:
  • 10apple scented mint
  • breakfast, lunch

    Make a checklist. Keep all ingredients within reach

    Soak the superblend grains in 4c water, about 10 minutes. Cook in a pressure cooker folloeing manufacturer’s instructions. Let it complety get cppked. Remove from the cooker. Let it cool, transfer to a bowl

    Add the veggies, curd and Greek yogurt. Mix with a spoon

    This is what gives the unique taste, flavor and aroma to the dish. Over medium heat in a saucepan heat oil. Pop mustard seeds. Then stir in cumin seeds, tender curry leaves, and green chilies. Stir in asafetida, a minute. Turn off the stove. I did this in a microwave is microwave safe bowl.

    Add the seasoning to the bowl with the super grain blend curd veggie mix. Chill it if possible.
    You may garnish with mint leaves to enhance the aroma. I grow apple scented mint. I used it for garnishing
    Tasty super grain blend with curd and veggies is ready to serve. You may serve the dish with pickle saambar or chutney. Curd rice and pickle is a match made in heaven. I served with homemade lime and mango pickles, mint chutney. Enjoy
