A common street food found in Japan, this dish started to appear in food stalls in the 1930s.

Since then, different ingredients has been used to make yakisoba - cabbage, bean sprouts, bell peppers - anything you have in your fridge/pantry!

It is usually served with aonori (Japanese seaweed powder) or beni shōga (shredded pickled ginger), and sometimes even Japanese kewpie mayo.

Ingredients

  • 200 gyakisoba wheat noodles
  • 200 gpork/beef/chicken, thinly sliced
  • 1-2 tbspneutral oil
  • 1onion, thinly sliced
  • 1spring onion, chopped
  • 1/2carrot, julienned
  • Sauce
  • 2 tbspWorcestershire sauce/ketchup
  • 2 tbspsoy sauce
  • 2 tbspoyster sauce
  • 1 tbspmirin

  1. 1

    Blanch the noodles in boiling water until just loosened up, then wash them under cold water and a dash of neutral oil to prevent sticking.

    Mix the sauce in a bowl.

    Over high heat, cook the chicken/beef/pork until brown and crispy.

    In the chicken fat, add the vegetables and stir fry until cooked through but still crispy.

    Add the noodles and the sauce, then stir fry until everything comes together. Enjoy!
