Crispy Sweet & Spicy Deep Fried Fish

Clean and score fish. Pat dry fish, in and out, with clean kitchen towel. FINELY CHOP all ingredients in ✅️B (ginger, lemongrass, garlic, red chilies).

Grate or shave palm sugar. Keep aside. Dilute 1 tsp of corn flour in 1/3 cup of water. Keep aside. Next, take the fish, thinly coat the fish with corn flour, making sure all sides, in and out, are thinly/evenly coat. Over medium fire, heat enough oil in a pan for deep frying. When the oil is hot enough, fry the fish. Do not move the fish for a minute or two so the fish won't break. Once you notice it's slightly golden, flip the fish. Fry until both sides are golden and crispy.

Remove fish and it's best to cool it on a wire rack instead of a plate, this is to keep the flesh from touching excess oil.

Next, in a sauce pan, heat 5 TBSP OF oil and sauté ginger for a minute. Add lemongrass and keep sauteing until it's AROMATIC. You will be able to smell it after 2 minutes or so. Cook over medium to medium low heat.

Next, add garlic and chilies. Cook for 30 secs to 1 mins.

Add palm sugar. Stir to mix. Add fish sauce and stir again. Mix in a handful of baby spinach.

Cook until the green is wilted. Add corn starch solution (slurry made earlier. Make sure to stir before pouring). Continue to stir until it's thicken. Turn off the heat. Add lemon juice. Mix well. Taste your sauce.

Plating - place fried fish onto a serving dish. Pour sauce over the fish. Serve hot with steamed rice.
