Avocado Sandwich

With these hot days, I don't feel like spending much time cooking, so I go for simple, light meals. Tonight, I made sandwiches with avocado, an egg, and some shredded cheese. I filled them with cream cheese, smoked salmon, cherry tomatoes, cucumber slices, and arugula. I used an air fryer for cooking.

Prepare the ingredients.

Cut the avocado in half, remove the pit, and scoop out all the flesh with a spoon. Mash it with a pinch of salt and pepper.

Add the egg and the cheese grated on the large side of a grater.

Mix everything together. Using a round mold, form two circles of the mixture and place them directly in the air fryer on parchment paper. Sprinkle with seeds of your choice.

Cook at 355°F (180°C) for 20 minutes. They should be slightly browned on top. When ready, use a spatula to flip them so they set well on the other side. Continue cooking for just 3 to 4 more minutes. The sandwich rounds should still be soft. Once cooked, let them cool.

When cooled, fill with cream cheese, cucumber slices, smoked salmon, arugula, and cherry tomatoes. They are truly delicious.
