Albacore Pea Chimichanga Salad

Chimichangas are flour tortillas (wraps) that can be filled with different types of meat, beans, vegetables, and cheese, then folded like an envelope and usually fried, though you can also finish them in the oven. They're commonly served with mashed avocado or guacamole, salsa or pico de gallo, and sour cream.

Cook the carrot in boiling water until just tender, then cool with water and dry. In a large bowl, flake the albacore.

Add the remaining ingredients and mix well. Refrigerate until ready to use.

In a bowl, combine both cheeses. Lay the tortillas on the table and sprinkle half the cheese on the lower part of each tortilla. Spoon the albacore salad over the cheese. Sprinkle the remaining cheese over the albacore salad.

Fold the tortillas into an envelope shape. In a skillet, heat a little oil and brown the chimichangas on both sides.

Serve immediately with mashed avocado or guacamole, salsa or pico de gallo, and sour cream.
