Meatballs in Almond Sauce 🧄🍞🧅

I wanted to try making meatballs with a sauce different from the usual tomato one, and I had some roasted almonds that didn’t turn out great—they were a bit soft for my taste—so I tried making this sauce, and it turned out delicious!

The meatballs are homemade. I always make them by buying ground meat and mixing it with garlic, parsley, egg, and breadcrumbs.

Since we’re trying to eat a bit healthier during the week, I buy ground turkey, but mixing pork and beef makes them juicier!

  • About 15 meatballs
  • 1medium onion
  • 4 clovesgarlic
  • 1 slicebread
  • 1small handful roasted almonds
  • Water
  • Salt
  • Light olive oil
  • Extra virgin olive oil

    I prepared the meatballs the day before, so I just needed to fry them and make the sauce.

    Pour enough oil into a skillet to fry the meatballs. I use light olive oil, but you can also use sunflower or canola oil, or any light oil.

    When the oil is hot, add the meatballs to the skillet and fry them.

    Once they are golden brown on all sides, remove them and place them on a paper towel to absorb the excess oil.

    Next, start making the almond sauce! First, peel and chop the onion for sautéing. You can chop it however you like since everything will be blended later.

    Peel and chop the garlic cloves as well.

    Remove some of the oil used for frying the meatballs, but leave a little in the pan to sauté the onion first.

    Meanwhile, cut the slice of bread into pieces to fry as well.

    When the onion is almost ready, add the garlic. Sauté until golden, then remove everything and place it in a bowl for later.

    Add a bit more oil to the skillet to fry the almonds. Stir them constantly so they don’t burn! (I didn’t remove the skins because it was difficult, and since they were already roasted, I didn’t want to blanch them.)

    Finally, fry the bread. Add another splash of oil and fry the bread pieces until golden. Then place them in the blender jar.

    Add the other sautéed ingredients (the almonds, onion, and garlic) to the blender jar.

    Add a little hot water to help blend everything into a sauce consistency.

    Blend until you reach the desired texture. It’s better to add water little by little so the sauce doesn’t get too thin. I had to add a bit more water to get the texture I wanted. Add salt! If you already salted the onion earlier, taste and adjust as needed.

    To finish, in the same skillet, add a splash of extra virgin olive oil, the sauce, and the meatballs!

    Let everything simmer for a bit, and they’re ready to eat! You can serve them with diced fried potatoes, for example.

    The flavor of the roasted almonds goes really well with the meat… They turned out delicious! (In the last video, you can see Toronto’s famous CN Tower in the distance.)
