First of all, mix both the flours, oil for moin, spices, salt and gradually add warm water and knead stiff hard dough.

Make equal size balls, press between two palms and flatten. Deep fry on low flame till pink and crispy.

Pressure cook mix veggies in a cooker for 2 whistles. Here I have taken potatoes, cauliflower, carrot,bottle gourd, french beans, flat beans, brinjals, green peas, corn kernels, etc. You can take veggies of your choice.

Heat oil, add all khada masalas, add chilli ginger garlic paste, green garlic, spring onions saute for couple of minutes. Add tomato puree.

Add turmeric, red chilli, dhaniya jeera powder, salt and garam masala. Saute and add boiled veggies. Mix it well. Also add Fenugreek dhoklis. Add water, let it cook till oil floats and all the spices are merged nicely with veggies.

Enjoy Chapdi and Undhiyu with tomato onion salad, papad and a glass of butter-milk. We Kathiyawadis, make chura of chapdi and mix it in the Undhiyu and enjoy...
