Banana and Tapioca Pearl Sweet Soup (Chè Chuối)

Sweet soups aren't really my specialty, but since I had extra bananas and coconut milk at home, I decided to give it a try. This might not be the traditional recipe, but it tastes great!

Sweet soups aren't really my specialty, but since I had extra bananas and coconut milk at home, I decided to give it a try. This might not be the traditional recipe, but it tastes great!
Steps
- 1
Peel the bananas and marinate them with 2-3 tablespoons of sugar for 3-4 hours.
- 2
Simmer the bananas over very low heat until the surface becomes slightly dry. Let cool, then cut the bananas into short pieces about 1/4 inch (0.7 cm) thick. If you want to skip this step, you can use the bananas as is.
- 3
Cook the tapioca pearls in the water until they turn translucent.
- 4
Add the bananas, coconut milk, and sugar to the pot and simmer on low heat for 15 minutes. Since the bananas are already sweet, don't add too much sugar.
- 5
For a nice presentation and extra flavor, you can slice a few bananas in half lengthwise and bake or dehydrate them in the oven until dry. Use these dried banana pieces to decorate and add a chewy, fragrant touch to the sweet soup.
