Foxtail Millet Jaggery Pudding

Millets are considered highly nutritious grains, with low glycemic index. They are good source of protein, iron, calcium and fibers. It's a good option for people with gluten sensitivity. There are many types of millets like brown top millet, Pearl millet, Ragi, Jowar, Barnyard Millet and so on. So, I opted Foxtail Millet which is also known as kangani, rich in Vitamin B12, iron and fiber. Made healthy pudding to enjoy as a breakfast. Nutritious, light and fulfilling.

Steps

Wash, rinse and soak Foxtail millet overnight then pressure cook it. Then, boil milk in a pan.

Add cooked millet in a boiling milk. Mix well and cook for 5-7 minutes.

Then add jaggery powder, nutmeg powder, cardamom powder or cashews. Cook for 2 minutes and turn off the heat. Top it with cranberries or anything you like.

Serve hot, warm or chilled.

Note - You can opt store bought cinnamon powder, jaggery powder or Nutmeg powder. In this recipe I have used jaggery powder and nutmeg powder simply by grating it.
