Ingredients

  • Batter Ingredients:
  • 4 cupsAll-purpose flour
  • 2 tbspRice flour
  • 1 tspBaking powder (I use Alsa Baking Powder)
  • 1/2 tspSalt
  • 1 1/3 cupSugar
  • 1 packDr. Oetker Vanilla Sugar
  • 3large eggs
  • 2 cupsWater
  • 400 mlCoconut milk
  • 3 tbspBlack sasame seeds
  • For Frying:
  • 1/2 gallonVegetable oil for frying
  • 2Lotus Cookie Molds
  • 2Cookie Racks
  • 2small glass bowls

Steps

    Mixed all the batter Ingredients into a mixing bowl

    Heat a frying pan with vegetable oil

  3. 3

    Preheat the lotus cookie molds into the hot oil. After heating, tap the mold gently on paper towels to shake off excess oil

    Dip the mold into the batter to 1/4 ways up. Do not cover mold with batter

    Submerge the mold with the batter in the hot oil for a few seconds. Shake the batter off the mold into the hot oil. Allow the cookie to cook for 20 seconds on each side until golden and remove to a cookie rack

    On cookie rack, shape the fried cookie over a small bowl to give it the lotus flower form. Let it cool. Continue with the remaining batter, starting again from dipping the mold
