First, in a paella pan for 4 to 6 people, pour a generous amount of olive oil and sauté the pork ribs (my mom had browned them a bit the day before, so we just needed to brown them a little more).

Chop the onion and sauté it with the ribs.

Meanwhile, dice the bell peppers into small pieces and add them to the pan with the onion and ribs.

Heat the beef broth in a saucepan so it's hot when you add it to the pan.

Grate the two garlic cloves and the ripe tomato.

Once everything is nicely sautéed, add the grated tomato and garlic to the pan. Stir everything so it continues to cook together.

Add salt to taste.

When everything is well sautéed, add the fideo pasta and toast it well until golden brown.

Once the pasta is nicely toasted, pour in the hot beef broth. Let it simmer until all the liquid is absorbed.

When the broth has been absorbed, the noodles should be standing up slightly!
