Assemble all ingredients and preheat the oven to 475° F

Wash and peel potatoes. Cut them into 1/4 inch or 1/2 inch fries.

In a bowl, add potatoes, olive oil, salt, black pepper, smoked paprika, Italian seasoning, and asafetida. Toss and coat evenly.
