Healthy Soaked Fenugreek Seeds Weightloss Chutney For All Meals

This recipe is a gift from my grandmother (aajji) from her treasure trove of traditional recipes. It is a Maharashtrian chutney made with soaked Fenugreek ( methidana) , Roasted Peanuts, curry leaves, sesame seeds, spices, jaggery and tamarind pulp. My granny used to say, it reduces high sugar, bone pain and excess fat in the body. Fenugreek seeds are proven to be effective in diabetic patients, they help in hair growth, brain health and eyesight. Curry leaves and sesame seeds contain calcium for strong bones and healthy hair, skin and aid in weight loss. This chutney is a must have in your meals. Goes well with roti, rice, Idli, dosa and sandwich too. First, wash and soak the methi seeds and dry red chillies in 1/4 cup water for 4 to 6 hours/ overnight.

After soaking, separate the water in another bowl and keep. Heat a pan. Add oil, cumin seeds, curry leaves, sesame seeds,asafoetida and saute well for 5 minutes on medium heat till they are crisp.

Then add the methi or Fenugreek seeds, red chillies (cut in small pieces), salt and saute for 5 minutes.Add all the spice powders too.

Remove from heat, add tamarind pulp, jaggery powder and mix. Cool to room temperature.

Blend to a smooth paste with reserved water and adjust the consistency. Serve with rice, roti or in breakfast as chutney for idli, dosa, uttapam or as a spread for your sandwiches. Eat regularly for a healthier you.
