I was craving moimoi!
And it was my first attempt. I'll drop another recipe if I tweak anything.
Steps

In a bowl, put in the dried ingredients: beans flour, dried pepper, salt, and crayfish.

Heat up oil in a pan. Sauté the onions, fresh pepper, and Gino paste. Season with your preferred bullion cube (I used Knorr chicken). Then set aside.

Gradually add water to the bowl of dried ingredients and stir in a clockwise/unidirection until you're satisfied with the consistency.

Pour in the sautéed sauce and mix it into the batter.

Taste the batter to adjust seasoning.

Heat up water in a pot. Leave it to boil.

Scoop the batter into moi-moi plates. Top it up with the boiled eggs. (Use your preferred protein—deboned boiled fish, shredded chicken, minced meat).

Seal the plates with plastic(white nylon) and cover it with the lid.

Gently place the plates in the boiling water on medium heat.

Cover the pot tight and allow it to cook for 45-50 minutes.

If not fully cooked, top up more water and increase cooking time.

Turn off the heat and bring down the pot. (PEEP THE MOIMOI PLATE)

Serve with rice, custard, pap/akamu, oats, soft bread loaf, or serve alone.
