Heat oil in a pan over medium heat.

Add mustard, cumin, fennel seeds, urad dal.

Add the potato pieces, Curry leaves, Ginger garlic paste and sauté for 5 minutes.

Sprinkle all spice powders and salt over the potatoes.

Stir well and cook, stirring occasionally, until potatoes are golden and cooked through. Serve hot once done 😋😋

Tips
For extra crispiness, you can fry the potatoes in batches and avoid overcrowding the pan.
