Ingredients

2 people
  1. 1 inchpiece of ginger crushed
  2. 4-5 clovesgarlic crushed
  3. 1-2green chillies finely chopped
  4. 1medium potato diced
  5. 1/2 cupdiced carrot
  6. 1/2 cupchopped beans
  7. 1medium onion sliced
  8. 2-3spring onion whites sliced
  9. 1/2 cupchopped cabbage
  10. 1large tomato diced
  11. 1 tspsalt or to taste
  12. 4 cupswater
  13. 1/2 cupspring onion greens
  14. 1/2 cupchopped fresh green coriander leaves

Steps

20 minutes
  1. 1

    Bring water to a boil in a large pan. Add in the ginger, garlic, and green chillies. Cook for a minute or two.

    Add in the potatoes, carrots, and beans. Cook until half done.

    Next, add the sliced onions, spring onion whites, cabbage, and tomatoes. Add the salt and continue to cook until the vegetables are tender. Make sure they don’t turn mushy.

    Just before switching off the flame, add the spring onion greens and chopped coriander. Mix well.

    Chamthong is ready to enjoy. Serve hot.
