Quick and easy spinach with peanut sauce

My first experience with Thai food was as a young adult, in my 20s. I was introduced via a dish called Showering Rama consisting of spinach sauteed in a deliciously rich peanut sauce. I was absolutely hooked! It's one of my favorite Thai dishes to this day. Tonight I made a version of it using 3 ingredients: fresh spinach, a commercially prepared Thai peanut satay sauce, and some crushed honey roasted peanuts.

Ingredients

10 to 15 minutes
2 people as a side dish
  • 6 ozfresh spinach
  • 2 tablespoonsyour favorite Thai peanut satay sauce
  • A fewhandfuls of honey roasted peanuts chopped or crushed

Steps

10 to 15 minutes
  1. 1

    Heat peanut sauce in skillet

  2. 2

    Add spinach, stirring until completely wilted in the sauce

  3. 3

    Remove from pan to serving dish. Chop or crush peanuts and scatter on top of the spinach satay. Serve warm.
