Malabar Spinach Soup / Vietnamese Canh Mong Toi Tom for kids lunch

I grow Malabar Spinach at home and today for lunch I wanted to cook something different and not an Indian dish. So, Canh Mong Toi Tom is a very healthy dish for kids and adults - tender Malabar spinach or Mong Toi in Vietnamese language, shrimps, fish sauce for seasoning and best enjoyed over rice. Of course one can have as is too.

So, Canh Mong Toi Tom is a very healthy dish for kids and adults - tender Malabar spinach or Mong Toi in Vietnamese language, shrimps, fish sauce for seasoning and best enjoyed over rice. Of course one can have as is too.
Steps

Wash the tender Malabar spinach or Mong Toi discarding the stems, chop fine and set aside. Wash the shrimps, discard the head and tail, devein and mince.

Mince garlic and in a bowl add minced shrimps, egg yolk, black pepper powder and salt and mix well.

In a wok heat oil, add minced garlic and stir till light brown in colour, add chicken broth and let it come to boil

Add chopped Malabar spinach or Mong Toi and let it come to boil
- 5
Add 1 Tbsp of shrimp mix and drop to form a ball, press gently to put it at the bottom
- 6
Add fish sauce for seasoning and salt and mix well. Set aside when shrimps are cooked
- 7
In a serving bowl add rice and add the soup and slurp
