Ingredients

1 hour
1 1/8 lbs ground pork (about 500 grams)
  • 1/4onion, finely chopped
  • Coarse salt to taste
  • 2tomatoes
  • 2dried chipotle chiles
  • 2mirasol chiles
  • 1/4onion
  • 1garlic clove
  • Worcestershire sauce to taste
  • Maggi seasoning sauce to taste
  • Dry mustard to taste
  • Cayenne pepper to taste
  • 1spice bundle with 2 whole cloves, 3 allspice berries, 2 bay leaves, a pinch of cumin, and 1 sprig of thyme
  • 2carrots, diced
  • 1potato, diced
  • 2 handfulsgreen peas
  • Olive oil to taste

    Heat the olive oil in a saucepan. Add the ground pork, a little coarse salt, and the finely chopped onion. Stir everything together and sauté well.

    In another saucepan, bring water to a boil. Add the tomatoes and chiles, and cook until the chiles are soft. Peel the tomatoes and blend them with the onion, chiles, and garlic until smooth.

  3. 3

    Add the Maggi seasoning, Worcestershire sauce, cayenne pepper, dry mustard, spice bundle, blended mixture, potatoes, carrots, and green peas to the sautéed pork. Cook until the vegetables are tender. Remove the spice bundle before serving.
