Ingredients

  • 1 cupsmooth peanut butter
  • 150 gramsgranulated sugar about ¾ cup
  • 1large egg
  • 1/2 teaspoonsea salt
  • 16mini Reese’s peanut butter cups
  • 2- ounce chocolate chips any kind
  • 32candy eyeballs

    Preheat oven to 375F and line a baking sheet with parchment paper.
    Combine peanut butter, white sugar, egg and salt in a medium bowl and mix until smooth.
    Using a 1 ½-tablespoon cookie scoop, place dough balls on baking sheet.
    Bake for about 11 minutes, until cookies are slightly browned.
    While still on the baking sheet, place a mini Reese’s upside-down in the center and lightly press down.

    Allow them to cool mostly on the cookie sheet, then transfer to a cooling rack.
    Once fully cooled, melt chocolate in a heat-safe bowl incrementally in the microwave for 30 seconds at a time, stirring between each interval; alternatively, you can use a double boiler. Cool slightly then add to a piping bag or Ziploc bag and cut a small hole in the tip.
    Pipe chocolate where the eyeballs will be as “glue” and then 8 legs.

If you’d told my college self that I’d one day be sharing recipes on my own blog, I’d have probably laughed—while pretending to cook my way through a show in my head (and entertaining an imaginary audience!).Fast forward 16 years, and I was running my own wedding and event photography business, Philosophy Studios, until the pandemic hit. With events on pause, I took a deep dive into food photography and recipe creation through an excellent program from Pretty Focused. The experience reignited my love for cooking, and after graduating, I started working full-time with food bloggers as a content creator. A couple of years later, My Rad Kitchen was born!When I’m not cooking, you’ll find me spending time with my family (and our puppy, Penny), traveling, or soaking up music with my gals.
